1. Acidic food with a pH value less than 7.3.7 < pH value ≤ 14 refers to alkaline food.
The effect of pH value on microorganisms
1.The most suitable pH for the growth of most microorganisms is 6.5-7.5.
2. Most bacteria cannot grow and reproduce in acidic environments.
3. The most difficult to kill Bacillus botulinum cannot reproduce at a pH value below 4.6.
