1.Sterilization pot equipment safety: 
 
Retort belongs to the pressure vessel, there is the possibility of explosion wounding, retort must have qualified safety valve and other design structure to ensure the safety of equipment. 
 
2. Whether the heat distribution of the sterilization retort is even: 
 
The heat distribution in the sterilization equipment is not uniform, it will make the sterilization of some sterilized products excessive, resulting in poor quality cans. Some sterilization strength is not enough, may cause incomplete sterilization safety accident. 
 
3. The structure of the sterilization retort is reasonable: 
 
The structure design of the sterilization retort must be reasonable, the position of the opening, the caliber of the pipe, the size of the pump and so on.

4. The convenience of operation of the retort machine: 
The design of the sterilizer must be easy to operate, especially some semi-automatic equipment needs to manually control some valves, and the design should be as compact and easy to operate as possible. Mercury thermometer and pressure gauge are designed for easy observation and correction. 
 
5. Control accuracy of the sterilizer: 
The control accuracy of the sterilizer mainly refers to the control accuracy of temperature and pressure. Certainly the higher the control precision, the better. For example, the temperature control accuracy is generally required to be within ±0.5 degrees Celsius. 
 
6. Energy-saving design of the sterilizer: 
Retort sterilization requires heat energy, so energy consumption is a must. Whether the sterilizer has an energy-saving design is an important evaluation criterion for the quality of the sterilizer. Whether the sterilizing pot has an insulation layer structure, whether the hot water in the sterilizing pot is recycled, etc.
